Protein Packed Peanut Butter Cookies

When you’re having one of those days, sometimes all you need to hear are those three little words…

Bet you thought I was going to say, “I love you” or something mushy like that?! Please people, if you read my blog you should know me better than that. Mushy posts are reserved for leap years and comet sitings.

But back to the cookies. A certain someone I know loves cookies and especially loves peanut butter cookies. Since we’re both trying to make smarter decisions about the food we consume, I thought I would try to make a healthier peanut butter cookie but really, had no clue how to do it. After all, cookies contain two of my favorite ingredients creamed together: butter and brown sugar. A cookie isn’t a cookie without these two things!

Or so I thought. And then I came across a recipe on the Premier Protein website: Peak Performance Peanut Butter Cookies and thought to myself, hell ya! I’ve been trying to get more protein in my diet and if it took eating cookies to achieve that goal, then I was up for it.

The great thing about these peanut butter cookies are there are minimal ingredients. In fact, there are only six and I bet you have 5 of them in your pantry. The sixth ingredient is a bit more specific so make sure you follow the recipe and use Premier Protein® Whey Protein.

The recipe I found on the Premier Protein® website called for vanilla powder but I only had chocolate so that’s what I used. Technically the title of this blog post should be Protein Packed Chocolate Peanut Butter Chocolate Chip cookies but since that title has more words than the recipe has ingredients, I thought it was a bit much.

If you’re not familiar with Premier Protein Whey Powder, let me share a few facts with you.

  1. There are no artificial flavors, colors or sweeteners.
  2. Each scoop contains 30 grams of protein, 180 calories and 2 grams of sugar.
  3. It’s gluten free.
  4. You can mix this stuff with water, use it in a smoothie or as I’ve done, cook with it!

The cookies were better than I thought they would be. While they were a bit drier than the peanut butter cookies I’m used to eating, they were still sweet and the chocolate chips were a nice touch.

Protein Packed Peanut Butter Cookies

These protein packed cookies are the fuel you need for an afternoon pick-me-up or a post workout recovery....or just sitting in your pajamas on a Sunday morning. You can find this recipe and more the Premier Protein website.
Ingredients
  • 2 scoops Premier Protein Chocolate or Vanilla Powder
  • 1 cup creamy peanut butter
  • 1 large egg
  • ½ cup white sugar
  • pinch of salt
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Lightly coat your cookie sheet with non-stick spray.
  3. Mix together all ingredients in a medium-size bowl.
  4. Roll 1-2 tbsp of dough into a ball and then flatten.
  5. Bake for 12-13 minutes, until cookies are golden brown.
  6. Let cookie cool for 10-15 minutes.

  24. Peanut butter cookies are my weakness. They have a good amount of protein in them from the peanuts, but adding whey protein makes them even better!
