Oatmeal Bar

One of the things our family likes to do is indulge at breakfast every now and then. We’ll make pancakes (preferably pumpkin), sausage or bacon and eggs. Sometimes there will be some sweet treats like cinnamon rolls or donuts. Unfortunately we can’t always indulge like that so on the weekends where we’re being a little bit lazy, I make a pot of oatmeal and set up an oatmeal bar.

The great thing about an oatmeal bar is that I really only have to cook one thing yet everyone gets to eat their oatmeal however they want. My personal preference is to eat my oatmeal with some brown sugar, raisins and diced apples. My daughter loves hers with pumpkin, brown sugar and pumpkin pie spice. The verdict is still out on what Kurt likes. He says he doesn’t like oatmeal but I would bet some chopped bacon and maple syrup might change his mind.

When I set up an oatmeal bar, I keep it simple with not too many ingredients. I usually have brown sugar, Stevia, maple syrup and honey as offerings for sweetness. I always have pumpkin, because that’s how Brecken prefers her oatmeal, and then I have some diced fruits such as red and green apples, dried cranberries and raisins. And last but not least, I get out my spices. Cinnamon and nutmeg seem to be the most popular.

Now when I make my oatmeal, I typically do a combination of water and milk but thought using something different would be fun. The last time I was at my local grocery store, I picked up a big bottle of Hazelnut International Delight creamer. Instead of using milk, I used the creamer in the oatmeal. I have to say, I was pretty impressed with my oatmeal sans all the toppings (thought I still added my fruit and tiny bit of brown sugar).

So the next time your in the need to feed a group for breakfast, try a oatmeal bar and be a bit sneaky. Go ahead and surprise them with some extra creaminess.
