Friday evenings are hectic at my house.  After I leave work, it’s a made dash to the train station and then home to get my daughter to gymnastics.  Ideally I would never had signed up for a class at 6:30 pm on Friday but with my busy schedule, that’s the only time that work.  By the time we get home from gymnastics, we’re tired and hungry yet eating out isn’t always an option.  I’m trying to stay true to a budget which doesn’t allow for eating out every week.  There are also times that I want a meal that uses fresh ingredients – not something from a box or picked up through the drive-thru.  That’s where HelloFresh helps me out.

The vegetables were nice and crisp. I was really impressed with the quality of the ingredients considering they were shipped to me. I’m not sure how many days in transit it took for my meals to get to me but the quality was no different than if I had picked everything up at the grocery store that day.

After I chopped the onion, basil, green onions and garlic, it was time to roll the meatballs. The directions didn’t specify how much chopped onion was needed so I ultimately cut up too much. No fear, my daughter decided to make a “salad” with the extra onions, basil and green onions that I didn’t use.  Amazingly, her salad was pretty good! The sweetness of the sauteed onions mixed with the greens worked well. She was so proud of herself that she offered to make us a salad every night.

On hindsight, I would have made my meatballs a bit smaller so they would have cooked a bit faster.  I also would have diced my onions instead of chopping them and only used about a 1/4 cup but after I sauteed them, you didn’t even notice the big chunks of onion in them.

After cooking the meatballs, adding the sauce and remaining ingredients, it was time to eat! It took me about an hour to prepare dinner but considering I had a 3-year old helping me in the kitchen, I probably could have cut that time down by at least 20 minutes. Either way, this meal wasn’t about speed, it was about being in the kitchen with my daughter and teaching her that green food can taste good.
