Day 9 of Being Thankful: Sun-Dried Tomatoes

Day 9: I am thankful for sun-dried tomatoes. They make everything taste better. Well, except maybe for chocolate. I’m not sure how chocolate covered sun dried tomatoes would taste but I’m willing to try…

If you haven’t had the pleasure of eating a sun-dried tomato, you are definitely missing out.  Sun-dried tomatoes are a piece of tomato sunshine that has just the right bite for those creamy pasta dishes, homemade pizzas and salads.  They are sweet and chewy and so, so good!  I usually have a bottle of sun-dried tomatoes in my refrigerator but recently realized how incredibly easy they are to make.

Sun-Dried Tomatoes


  • Roma tomatoes
  • Olive Oil
  • Salt


  1. Preheat oven to 200°F.
  2. Wash and dry the tomatoes.  Cut in half and scoop out the seeds, draining as much liquid as possible.
  3. Place the tomatoes on a cookie sheet lined with foil, being careful not to let the tomatoes touch.  Brush with a little bit of olive oil and season with salt.
  4. Place in the oven and cook 6-8 hours until they look leathery but still flexible to the touch.

You can store the sun-dried tomatoes (OK, oven-dried) in a sterilized jar, covering the tomatoes with olive oil.  Store them in the refrigerator.  When you’re ready to use them, just let the jar come to room temperature.
