Chocolate Covered Cherry Cookies

I made these Chocolate Covered Cherry Cookies for my daughter’s preschool teachers.  Even though Teacher Appreciation Week isn’t until May, I try to show my appreciation throughout the year by making simple homemade gifts that mean a lot.  This simple, easy to make recipe tastes rich and wonderful.  Enjoy!

Chocolate Covered Cherry Cookies

  • 1 1/2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 10 oz jar maraschino cherries, drained (save the juice)
  • 6 oz semisweet chocolate chips
  • 1/2 cup no-fat, sweetened condensed milk
  1. Preheat the oven to 350°.
  2. Drain maraschino cherries (remember to save the juice).
  3. Combine the flour, cocoa powder, salt, baking powder and baking soda, blending well with a whisk.  Set aside.
  4. In another bowl, beat the butter and sugar on low speed.  Add egg and vanilla, beat well.  Gradually add the dry ingredients to the creamed mixture.  Beat until smooth and well blended.
  5. With your hands, shape the dough into 1-inch balls (use a small ice cream scoop to make them uniform in size) and placed on an ungreased cookie sheet.  Press down center of dough with your thumb and place a cherry in the indentation of each cookie.
  6. In a small saucepan combine the chocolate chips and condensed milk.  Melt over low heat, stirring constantly.  Add 1 tbsp + 1 tsp of the reserved cherry juice, mixing well.  Spoon about 1 teaspoon of the chocolate topping over each cherry, fully covering the cherry.  If the frosting seems too thick, add more cherry juice to thin it.
  7. Bake at 350° for 10 minutes or until done.
Makes about 3 dozen cookies.
