Bean Bag Chili Recipe

Last month the company that I work for had an employee picnic at a local park. Since it was such a nice day, and we were kidless, my husband and I decided to ride our bikes to the event. Wichita isn't the most bike-friendly town, so we decided to start riding from his dad's house, which wasn't that far from the newly striped bike lanes. Riding on the streets was a change for me (I usually ride on gravel roads) but it was pretty neat riding the 11 miles across town, instead of driving … [Read more...]

Gifts From The Kitchen: Chili Gift Basket

Disclosure: I am a member of the Collective Bias®  Social Fabric® Community.  This shop has been compensated as part of a social shopper insights study for Collective Bias and their client. The perfect gift for a foodie is, well, food! This year instead of spending hours fighting the crowds at the mall or on Michigan Avenue, I decided to do my Christmas shopping at my local Mariano's. I know what you're thinking and you're wrong. My gifts didn't come from the awesome floral department or even … [Read more...]

Tomatillo Soup With Rice

This is a sponsored post written by me on behalf of Success® Rice. They must have known I need a few short cuts when making tomatillo soup with rice and they helped a girl out! As always, statements are 100% mine and yours may differ. I feel like Gwyneth Paltrow has been staring at me for over a month. She's wondering why I keep picking up her cookbook, only to mark pages but never actually make anything. She smiles at me with her perfect smile and white teeth and I can envision her … [Read more...]

Cheesy Potato Soup

It's super cold here in Chicago. This morning I woke up to the sound of my husband scraping the windshield on the car.  We've had a pretty mild winter but I have a feeling that February is going to be a beast.  I can't decide if I like cold weather or not.  I do like having seasons.  Though living in southern Florida sounds pretty tempting right now, I know I would miss curling up on the couch with a nice warm blanket and a bowl of cheesy potato soup. I've been on a huge soup kick lately. … [Read more...]

Beer and Beef Stew

Meat, veggies and potatoes and beer.  Sounds perfect on a chilly fall night, doesn't it?  At my house we generally have some type of soup, stew or chili once a week and this week, we're having a simple, but tasty beer and beef stew. I originally saw this recipe in Cooking Light and knew I had to try it.  They recommend using Belgian beer (and I do too) but I've also used some of the fun seasonal beers such as Blue Moon Pumpkin Ale.  Use whatever beer you want but just like cooking with … [Read more...]

Hearty Minestrone Soup Recipe

Ah yes, the return of fall.  That means kids are back to school, there's a slight chill in the air, college football is on our television and the return of soups to my menu planning.  I really miss these guys during the summer.  I love how you basically just chop and add things to a pot and let it simmer.  Even better? The longer it sits, the better it tastes.  Because the weather is really starting to change her (the high next Tuesday is 63°!), I figured it was time to make some of my hearty … [Read more...]

Slow Cooker Chicken Tortilla Soup

If I'm going to make a meal in a slow cooker, I want there to be minimal prep.  Open and dump are terms I like to see in the instructions.  This chicken tortilla soup recipe fits that requirement, with a little bit of chopping if you like.  I make this recipe somewhat mild so everyone in my family will eat it but you can crank up the heat by adding hot sauce or jalapeno peppers. Slow-Cooker Chicken Tortilla Soup Ingredients: 1.5 lbs boneless, skinless chicken breasts (fresh or … [Read more...]
