Boomer Sooner Game Day Food: Red Velvet Cupcakes

My boss is a huge Oklahoma Sooners fan. He has football season tickets and makes it to most of the home games and a few of the away ones. As much as I like giving him a hard time about his choice in teams, I have to admit that Oklahoma football games are a lot of fun to watch. I haven’t been to one in years but this year, that changes as he gave me tickets to the Kansas State game. When I heard about these new Jell-O molds, I knew I had to get a few and make some fun game day food for him as a thank you.

Oklahoma is a southern state and it seems like a southern dessert is red velvet cake. I have the recipe that my Grandmother used but it requires a lot of time and patience, a few things I don’t seem to have when it comes to baking lately. I decided to take the efficient (not easy) way out and used a boxed cake mix instead.

I’ve learned that when making red velvet cupcakes, it doesn’t matter what your cupcake liners look like because they will end up dyed red but I still used some cute red and white polka dot liners. Besides, when it comes to game day food, no one cares if its from scratch, they just want to make sure everything is game day colors.

Word to the wise, this cake mix will dye your fingers and anything it touches red. That means if you accidentally dip your fingers in the bowl and have to lick the batter off them (I didn’t do that…I swear), you’ll have evidence on your fingers and possibly your teeth. I always use a metal mixing bowl when working with any foods with dyes to avoid staining my plastic mixing bowls.

I fill my cupcake liners about 2/3 full. I don’t have a fancy ice cream scoop, instead I eyeball it using a 1/4 cup measuring cup and a spoon. I’ve moved five times in the last four years and that means I’ve learned that less is more. More money in my pocket because I don’t have to pay the moving company as much!

While the cupcakes cooked, I pulled the Jell-O molds out of the refrigerator. I made the Jell-O jigglers the night before (following the instructions on the box). The instructions says to wait 3 hours but I wanted to make sure they were fully set and left them in the refrigerator overnight. They were easy to get out of the mold.

Now, for those of you who aren’t Oklahoma fans, don’t fret. has a variety of teams available. I even picked up the Iowa Hawkeyes (my team) and the Texas Longhorns (for a fun party post in a couple of weeks). Everyone knows that red velvet cupcakes require cream cheese frosting so I made up a batch. Just frost your cupcakes, put the OU Jell-O jiggler on top and you have the perfect game day food!

Red Velvet Cupcakes with Cream Cheese Frosting
Recipe type: Dessert
Show your team spirit using Jell-O molds!
  • 1 red velvet cake mix
  • 3 eggs
  • ¼ cup oil
  • water
  • 1 stick butter, room temperature
  • 1 8oz package cream cheese, room temperature
  • 1 lb box powdered sugar
  • 1 tsp pure vanilla extract
  • 1 box strawberry Jell-O
  1. Preheat the oven to 325-350 degrees, depending on the type of muffin pan you use.
  2. Make the Jell-O molds according to the package instructions. These need to chill for at least 3 hours so plan accordingly.
  3. Mix the red velvet cake mix according to package instructions and bake for 15-17 minutes. While cupcakes are baking, make the cream cheese frosting.
  4. Combine butter and cream cheese. Once thoroughly combined, add vanilla and gradually add powdered sugar. Mix well.
  5. Once cupcakes have cooled, frost with cream cheese frosting and place one OU Jell-O mold on each cupcake!
